“Safe swallowing recipes – A recipe book for people requiring modified diets”
This recipe book was developed jointly by speech and language therapists and dietitians who work as part of the safe swallowing team. The safe swallowing team work with adults with a learning disability who have dysphagia (swallowing problems). It aims to reduce the risks associated with dysphagia and support people to enjoy eating and drinking safely.
The recipe book describes dysphagia, food and fluid consistencies, how to modify food and fluid correctly, high risk foods and a balanced diet. It provides recipes for a variety of breakfasts, main meals, light meals, snacks, vegetable side dishes and puddings.
Each recipe can be modified to any of the consistencies recommended for people with dysphagia. All of the recipes included were prepared and tasted by the authors and the photos taken on-site. The recipes give exact quantities of ingredients needed to modify food to the correct consistency. For example, the method states how many additional tablespoons of sauce are needed to ensure a smooth puree consistency.
Please note that the recipe book was designed for adults with learning disability who have dysphagia, are nutritionally vulnerable and are at risk of weight loss. Most of the recipes are high in fat and calories therefore may not be suitable for other population groups e.g. children, people with high cholesterol.
The recipe book costs £5 each or for orders of five or more the price is £4 each. This is payable by cheque.
